<p>Busy, busy, it seems we are always busy!  However, it is still possible to serve healthy, quick meals.  These recipes for Orange Teriyaki Glazed Salmon Filet and Buttered Parmesan Rice show you how.  Add a salad and you have a quick, easy, healthy meal to serve family and friends.</p>
<p> </p>
<p>BUTTERED PARMESAN RICE</p>
<p>3 cups water<br />1/4 tsp salt, optional<br />1 1/2 cups uncooked long grain rice<br />1/2 cup butter (not margarine)<br />1 1/2 cups grated Parmesan cheese<br />1 tbsp minced fresh parsley</p>
<p>In a large saucepan that has a lid, bring the water and salt (if using) to a boil; stir in the rice. Reduce the heat to low, cover, and cook for 20 minutes or until tender. While the rice cooks, in a medium skillet over medium-low heat, melt the butter and cook until browned but not burned.</p>
<p>Place the hot rice in a serving dish and top with the grated Parmesan cheese. Pour the browned butter overall cover with foil or a plate and let stand for about 3 minutes. Sprinkle the fresh parsley over the top before serving.</p>
<p>Yield: 6 to 8 servings.</p>

<p>ORANGE TERIYAKI GLAZED SALMON FILET<br /> <br />1/3 cup orange marmalade<br />3 tbsp teriyaki marinade<br />1/8 tsp fresh ground black pepper<br />1 lb salmon filet, approximately 1-inch thick</p>
<p>In a small saucepan combine the orange marmalade, the teriyaki marinade, and the fresh pepper. Stir the mixture together over low heat until the marmalade is melted and the mixture is well combined. Allow mixture to cool to room temperature. Take out 3 tablespoons of sauce and set the rest aside.</p>
<p>Place the salmon with the skin side down in a glass baking dish. Brush the 3 tablespoons of the sauce of the top of the salmon. Marinade in the refrigerator for 20 to 30 minutes.</p>
<p>Prepare the grill for direct cooking by oiling the grid. Grill the salmon over medium-high heat for 5 minutes on each side or until the salmon begins to flake with a fork. Serve with the remaining sauce.</p>
<p>Yield: 4 servings at 283 calories, 23 g protein, and 19 g carbs per serving.</p>

<p>The next time you want a light lunch with friends or perhaps you are hosting a brunch, make this recipe for a tasty Alabama Zucchini Quiche. This is a good dish for diabetics as well as others since it only has 102 calories, 7 grams of carbs and 9 grams protein per wedge or serving. Serve this light refreshing quiche with a salad and you have a meal. Delicious, healthy, and easy; try it soon! Want dessert? Keep it light, too. A scoop of no-sugar-added ice cream with a spoonful of fresh berries would be a good choice.</p>
<p>ALABAMA ZUCCHINI QUICHE</p>
<p>1 tsp cornstarch</p>
<p>1/4 tsp oregano</p>
<p>1 cup canned stewed tomatoes</p>
<p>1 1/2 cups low-fat milk</p>
<p>4 eggs (or 1 cup egg substitute)</p>
<p>1 tbsp all-purpose flour</p>
<p>2 cups shredded zucchini</p>
<p>1/4 cup chopped onion</p>
<p>1/2 cup shredded Swiss cheese</p>
<p>1/2 cup shredded American cheese</p>
<p>2 tbsp grated Parmesan cheese</p>
<p>Nonstick cooking oil spray</p>
<p>In a small saucepan, combine the cornstarch and oregano. Add the tomatoes, stirring well, and bring to a boil over medium heat. Reduce heat; simmer 2 minutes or until thickened. Keep warm.</p>
<p>In a large mixing bowl, combine the milk, eggs, and flour; beat well using a wire whisk. Stir in the zucchini, onion and all the cheeses. Stir well to be sure mixture is well blended.</p>
<p>Pour the egg mixture into a 9-inch round quiche dish or deep dish pie plate that has been coated with the nonstick cooking spray. Bake at 350 degrees for 1 hour. Remove from oven, spoon the tomato mixture over the quiche. Cut into nine wedges and serve warm.</p>

<p>These recipes for Blueberry Corn Muffins and Light Blueberry Scones are great for anyone but especially so for the diabetic who loves bread.  As long as we diabetics eat these in moderation, we can satisfy our bread craving from time to time.  Enjoy with your coffee or hot tea but remember to balance with the other meals of the day to be sure you don&#8217;t eat too many carbs and no protein.</p>
<p>DIABETIC BLUEBERRY CORN MUFFINS</p>
<p>1 3/4 cups all-purpose flour</p>
<p>1/2 cup yellow cornmeal</p>
<p>1 1/4 tsp baking powder</p>
<p>1/2 tsp baking soda</p>
<p>1/2 tsp salt</p>
<p>3/4 cup Splenda granular</p>
<p>1/2 cup butter, softened</p>
<p>1/3 cup egg substitute</p>
<p>2 tsp vanilla</p>
<p>1 cup buttermilk</p>
<p>1 cup fresh or frozen blueberries</p>
<p>Preheat oven to 350 degrees. Spray a 12-cup muffin pan with nonstick cooking spray or line cups with paper liners; set aside.</p>
<p>In a medium mixing bowl combine the flour, cornmeal, baking powder, baking soda, salt and Splenda.  In a large mixing bowl, blend the butter until light and fluffy.  Slowly add the egg substitute.  Scrape down the sides of the bowl and continue to mix until the butter forms small lumps.  Add the vanilla and buttermilk to the butter mixture; mix well.  Add the dry ingredients to the wet ingredients in three separate batches, mixing well and scraping down bowl after each addition.  Gently fold the blueberries into the batter.  Scoop the batter into the prepared muffin cups, filling each almost to the top.  Bake in the preheated 350 degree oven for 20 to 25 minutes or until done.</p>
<p>LIGHT BLUEBERRY SCONES</p>
<p>3 cups reduced-fat biscuit baking mix</p>
<p>3/4 cup whole wheat pastry flour</p>
<p>1/4 cup canola oil</p>
<p>3 tbsps Splenda Blend for baking</p>
<p>3/4 cup fresh blueberries</p>
<p>1/2 cup plain low-fat yogurt</p>
<p>1/2 cup low-fat milk</p>
<p>1 to 2 tsps cinnamon/Splenda mixture/optional</p>
<p>Preheat oven to 400 degrees.</p>
<p>Lightly coat a baking sheet with nonstick cooking spray; set aside.</p>
<p>In a large mixing bowl, combine the baking mix and pastry flour.  Cut the oil in with a fork or two knives until mixture resembles coarse meal.  Add the Splenda Blend and blueberries; mix lightly.</p>
<p>Beat the yogurt and milk together in a small bowl; add to the flour mixture.  Stir just until blended and a soft dough forms.  Over-mixing will make the scones tough!  If the dough seems too dry add a little milk, one tablespoon at a time.  Flour your hands and pat the dough into a round shape or use a rolling pin and roll into a 1 1/2-inches thick circle.  Score the circle into 16 wedges.</p>
<p>If desired, mix some Splenda Blend with some cinnamon to make 1 to 2  teaspoons of mixture.  Sprinkle over the dough.</p>
<p>Place on the prepared pan and bake 10 to 12 minutes at 400 degrees.  Remove from the oven and cut the wedges apart.  Bake another 3 or 4 minutes until golden brown.</p>

<p>There is nothing as fulfilling as serving the family some scrumptious dessert after a hearty meal.</p>
<p>Even when guests have a meal in your house, a well-prepared dessert actually, can add a couple of feathers to your chefâs cap!</p>
<p>But then questions arise &#8211; are there easy dessert recipes available, which can be made with the least effort and yet can turn out delicious? What about using flour in a dessert recipe &#8211; are my guest allergic to flour? Or, will the taste of flour be too overwhelming?</p>
<p>There is nothing to worry, if you are looking out for easy dessert recipes which can be conveniently made without using an iota of flour. In fact, you do not even have to look for grandmaâs diaries for flour-free easy dessert recipes.</p>
<p>Here are a few easy dessert recipes which you can try out today:</p>
<p>Recipe #1: Maryâs Favorite!</p>
<p>The banana split cake is one of the most common easy dessert recipes, which does not even need baking! (Forget your diet though!)</p>
<p>To prepare this delicious dessert you need, 5-7 bananas, 3 sticks butter, 1 large container of whipping cream â whipped until stiff, 1 bottle of red maraschino cherries, half-cup of crushed pecans, 2 cups crushed crackers/biscuits 1 medium can crushed pineapple along with its own juice â drain well, 2 cups powdered sugar (Icing Sugar, confectionersâ sugar) and 2 eggs.</p>
<p>Start by beating the eggs, 2 sticks of butter, and powered sugar for 15 minutes = mixture 1 &#8211; Set aside. Then mix 1 stick butter and cracker/biscuit crumbs. Pat this mixture into a 13 x 9-inch pan. Taking care to spread mixture 1 over crust then cover with sliced bananas. Then add the well-drained pineapple now over the bananas and then be covered with whipped cream. Now you have to sprinkle pecans over top, placing a cherry in each section of about the size you plan to serve.</p>
<p>One of the most popular and easy dessert recipes is ready to serve after you have refrigerated it for several hours!</p>
<p>Recipe #2: DeDeâs â Diet What Diet Dessert!</p>
<p>This is yet another easy dessert recipe which also does not require any baking.</p>
<p>In fact this Chocolate Ãclair cake is as easy as a walk in the park (4 Extra rounds after eating this DeDe Says haha!)</p>
<p>All you need to do is to butter a 13 x 9-inch dish, and then line the bottom and sides with whole crackers (fewer calories) or Chocolate Biscuits (more Calories)</p>
<p>Next mix one 6-ounce package of instant French vanilla pudding with 3 cups of whole milk and blend for 2 minutes. Next Whip a Large container of Cream until thick and add it to the vanilla pudding. Pour an adequate layer of the mixture over the crackers/biscuits, then add another layer of crackers/biscuits, then more pudding mixture, finally topping with your crackers/biscuits.</p>
<p>All you need to do now is to frost with fudge icing which can also be made very easily:</p>
<p>Mix Â¾ cup of sugar and Â¼ cup of honey, 1/8 teaspoon of salt, 1/3 cup cocoa or melted chocolate and Â¼ cup of milk. Then bring the mixture to a boil and cook for 1 minute, after which you remove it from heat. Then add Â¼ cup butter and 1 teaspoon of vanilla flavoring.</p>
<p>Allow it to cool, after which you can beat until it acquires a smooth and thick texture, enough to spread over the top of the crackers/biscuits</p>
<p>Please refrigerate it for 24 hours before serving.</p>
<p>So you see, dessert recipes can be easy, simple, delicious and oh yes, calorie laden, HOWEVER, if you are making a fantastic dinner for a special occasion, then why not have a great dessert.</p>

<p>Diabeties has become much more common today than ever. Although this disease is hereditary, the increasing prevalence of this disease is partly due to poor nutrition.</p>
<p> There are basically two types of diabetes: type 1 and 2.<br /> Diabeties type 1 result from a lack of insulin that causes most of our cells to take up glucose from the blood. When there is inadequate supply of insulin, a normal level of blood glucose can not be achieved.</p>
<p> What happens is that there is an excess of sugar in the blood, resulting in hyperglycemia.</p>
<p> Type 2 diabeties is the most common form of diabeties and is known to have a later onset. This occurs most often in people with overweight and obese, people with unhealthy diets, and those who do not exercise regularly. If you have been diagnosed with diabetes, the doctor advised that you must change your diet and to start a program of regular exercise. Your doctor may have made you an appointment with a nutritionist. You will be able to get diabetic recipes off a dietician and off the Internet.</p>
<p> Diabetics are at increased risk of heart disease and problems of blood flow in your legs. They have to follow a healthy diet low in fat and a diet that also helps control your blood sugar level.</p>
<p> So what can you do to manage their diabetes, and to be healthy?<br /> 1,6-11 servings of grains and starches per day &#8211; bread, pasta, rice, cereals, dried beans and starchy vegetables like potatoes.<br />2.A minimum of 3-5 servings of vegetables a day &#8211; search for diabetic recipes and vegetable recipes using vegetables.<br />3,2-4 servings of fruit per day.<br />4,2-3 servings of low fat or no fat milk.<br />5.The group is less alcohol, fat and sweets they need to be limited. Alcohol and sweets should only be consumed as treats in small portions. Use recipes low fat and non fat or low fat products.</p>
<p> Other recommendations for diabetics are: &#8211;<br />- Look for specific diabetic recipes to help you follow a healthy diet for their condition.<br />- Eat the same amount of food at the same time every day &#8211; eat regularly to control your blood sugar level.<br />- Add starchy foods such as dried beans and bean soups and casseroles to increase their intake of starch. Look out for diabetic recipes that use these starchy foods, because they will have a positive effect on your blood sugar level.<br />- Eat plenty of fruit and vegetables because soluble fiber helps reduce the absorption of glucose in the intestine.<br />- Control your weight &#8211; This is particularly important for type 2 diabetes because extra body fat causes the body to have difficulty making and using insulin. If you lose a few pounds, you may even be able to reduce medication.<br />- Control your intake of carbohydrates in meals by carb counting. <p>Recipe #1:Â  Yes, this may sound incredible but chocolate and coconut cookies can actually be made the low-carb way. Here is one of the most sought-after low carb dessert recipes coming your way.</p>
<p>The ingredients needed for these types of cookies are:</p>
<p>1 Â½ cups almond flour,</p>
<p>Â½ cup coconut,</p>
<p>1 tsp baking powder,</p>
<p>1 Tablespoon cocoa powder,</p>
<p>2 eggs,</p>
<p>3/4 cup Splenda (Or other non sugar sweetener)</p>
<p>2 Tablespoon melted butter</p>
<p>a splash of any Â essence of you choice including vanilla, coconut or Â chocolate.</p>
