Old-Fashioned Soft Pumpkin Cookies Level: Easy

Prep: 10 min
Cooking: 18 min
Cooling time: 2 min cooling
Yields: 36 cookies

Ingredients
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 1/2 cups granulated sugar
1/2 cup butter (1 stick), softened
1 cup LIBBY’S® 100% Pure Pumpkin
1 large egg
1 teaspoon vanilla extract

Directions
PREHEAT oven to 350° F. Grease baking sheets.

COMBINE flour, baking soda, baking powder, cinnamon, nutmeg and salt in medium bowl. Beat sugar and butter in large mixer bowl until well blended. Beat in pumpkin, egg and vanilla extract until smooth. Gradually beat in flour mixture. Drop by rounded tablespoon onto prepared baking sheets.

BAKE for 15 to 18 minutes or until edges are firm. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Drizzle Glaze over cookies.

FOR GLAZE:
COMBINE 2 cups sifted powdered sugar, 3 tablespoons milk, 1 tablespoon melted butter and 1 teaspoon vanilla extract in small bowl until smooth.

Ingredients
2 cups all-purpose flour
2 1/4 teaspoons pumpkin pie spice
2 teaspoons baking powder
1 teaspoon baking soda
1 cup granulated sugar
1/3 cup butter or margarine, softened
1/2 cup firmly packed brown sugar
2 large eggs
2 large egg whites
1 can (15 oz.) LIBBY’S® 100% Pure Pumpkin
1 cup finely shredded carrot
Cream Cheese Topping (recipe follows)

Directions
PREHEAT oven to 350° F. Grease 15 x 10-inch jelly-roll pan.

COMBINE flour, pumpkin pie spice, baking powder and baking soda in small bowl. Beat granulated sugar, butter and brown sugar in large mixer bowl until crumbly. Add eggs, egg whites, pumpkin and carrot; beat until well blended. Add flour
mixture; mix well. Spread into prepared pan. Drop teaspoonfuls of Cream Cheese Topping over batter; swirl mixture with spoon.

BAKE for 25 to 30 minutes or until wooden pick inserted in center comes out
clean. Cool completely in pan on wire rack. Store in covered container in
refrigerator.

FOR CREAM CHEESE TOPPING:
COMBINE 4 ounces softened light cream cheese (Neufchâtel), 1/4 cup granulated sugar and 1 tablespoon milk in small mixer bowl until thoroughly blended.

Healthy cooking Recipe Faux Ranch Kefir Dressing (No Oil)

2 cups fresh Kefir
1 heaping tbs. fresh parsley, chopped
1 heaping tbs. fresh chives, minced
1 heaping tbs. fresh lemon zest, finely chopped
1 heaping tbs. fresh garlic, finely chopped
1 tsp. sea salt
1/2 tsp. xanthan gum

Combine all ingredients (except xanthan gum) and blend thoroughly. Slowly add xanthan gum and continue to blend until mixture thickens. Full flavor will develop after 6 to 8 hours.

Note: Dairy products combine best with nonstarchy vegetables and acid fruits. Don’t hesitate to add a little Flax Seed Oil to this recipe.

Healthy foods – Apple Celery Nut Salad Good for all!

This salad has a lot of PUFAs from the nut oils, but is so tasy and otherwise very healthful. Totally worth the splurge for a pretty spring potluck or dainty supper :) Obviously, feel free to increase, decrease, add, subtract or substitute to your
hearts content.. it’s a tossed salad after all :)

1 granny smith apple
1 gala or fuji apple
4 celery sticks, including the leafy tops
1/4 cup chopped parseley
1 green onion
1/3 cup raisins
2 cups leaf lettuce, like mesulun or baby greens
1 cup nuts – I used a mix of hazelnuts and pecans, but almonds or walnuts would
be really good too.

Core and chop apples but don’t worry about peeling them. Slice celery thinly and chop leafy tops. Slice geen onion finely, including the whites and the green. Break or very coarsely chop the nuts. Combine everything in a bowl with as much of the following dressing as you would like – go easy, the salad is so flavorful it doesn’t need much dressing.

Dressing:
5 parts oil – I used 1 part pumpkin seed oil and 4 parts walnut oil
3 parts acid – I used one part lemon juice and 2 parts white wine vinegar
salt

For the amount of salad above (fills a good size salad/mixing bowl) I would use teaspoons or half tablespoons as my measurement.

ps: adjust the types of oil and acid and this is my basic vinegarette dressing recipe. I like cider vinegar and not-extra-virgin olive oil along with italian seasoning and a tiny bit of prepared mustard. Or add a clove of garlic,
pressed, or whiz the whole shebang in a blender for a minute or two.
