			<content:encoded><![CDATA[<p>Here&#8217;s the background: I&#8217;m sensitive to the aflatoxin and mycotoxins in corn and beans, not the actual corn and beans. If I eat a teaspoon of beans my hands have bleeding lesions in about 20 minutes (and they take 2 weeks to heal on<br />
their own and are extremely painful). I can&#8217;t even eat regular potatoes chips because of the corn oil and there are only 2 brands that don&#8217;t list possible corn oil that I eat (I won&#8217;t discuss the wisdom of my potato chip habits right now, lol). Tortilla chips or corn tortillas? Forget it! Bean dip? Forget it! Organics, maybe? No way!</p>
<p>Strange. I grew up where corn and beans are staples and never had trouble. Oh well, the plight of the freaked-out immune system from chronic illness, right? Probably what made me reach a breaking point but maybe not so much&#8230;</p>
<p>Last week I ate a corn tamale brought up with some family from El Salvador freshly made. They had shucked the fresh corn, taken it straight to the mill, ground it into dough (not flour, still wet), and made the tamalitos. Since fresh corn doesn&#8217;t bother me I thought I&#8217;d give it a go. My hands itched a bit that night but not so much and no lesions. Interesting. I thought maybe they don&#8217;t have aflatoxin in the tropics OR since it wasn&#8217;t dried and in storage for<br />
forever the amount was minute and I handled it somewhat okay. There was itching and I only had 1/2 tamal (the dc liked it because it was sooo moist) but no long-term effects.</p>
<p>Fast forward to this week&#8230; I was making a bag of pinto beans for the family to keep them away from canned refried beans (NOT for me, right? Can&#8217;t eat them) and happened to read that morning in NT while they were cooking about how the soaking inactivates the aflatoxin. What?? Could it be true?? Could I once again enjoy beans?? Is THAT why I always ate them without any problem growing up? Canned beans didn&#8217;t even exist in the stores &#8211; it was just a given that<br />
everyone made them at home.</p>
<p>My experiment at dinner last night: Not 1, not 2, but THREE bean and cheese burritos&#8230;.(drum roll, please)&#8230; NO LESIONS! Not even itchy discomfort on my hands. No yeast flare-up. Nothing. Zilch. Unbelievable.</p>
<p>NT index has the pages listed for aflatoxin. However, here&#8217;s a point of confusion: It says in one part that cooking does NOT get rid of the aflatoxin (and that corresponds to my experience and what I&#8217;ve read in other places) and in another part says that the cooking DOES get rid of it (p.224). I don&#8217;t like inconsistencies within a book. It goes back to being easily confused and liking everything I&#8217;m learning in order and clearly defined <img src='http://www.myhealthhq.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> . Of course, now I can&#8217;t find where it says that cooking does not help with aflatoxin (maybe I inferred that from reading p.112 because that&#8217;s what my previous research/experience had ingrained in me).</p>
<p>Unfortunately, we never have leftover homemade tortillas (phrumph!) so instead of an unnecessary snack of a bean/cheese burrito I&#8217;ll go do another load of laundry instead.</p>

<p>Cholesterol-Lowering Drug-Induced Lou Gehrigs  Disease (ALS)</p>
<p>Interview by On Fitness Magazine with Shane &#8220;The  People&#8217;s Chemist&#8221; Ellison,<br />
M.S.</p>
<p>What physiologically happens in  the brain and spinal cord that is amytrophic lateral sclerosis (ALS)?</p>
<p>ALS occurs when cells of the nervous system (brain and spinal  chord) become inactive. This can result from many cellular dysfunctions. It  usually results from dysfunctional tau proteins &#8211; or simply put, a protein entanglement within the nerve cell. Tau proteins are responsible for ensuring  cellular integrity as well as the ability of the nervous system to transport electrical messages through the body.</p>
<p>If tau proteins are tangled, the  outcome is loss of voluntary muscle control. As time passes, atrophy (muscle  wasting) results. Victims of ALS usually die from inability to breathe due to  extreme muscle loss.</p>
<p>How do statins lead to ALS?</p>
<p>Statin use has been shown to cause tau  protein entanglement.</p>
<p>You&#8217;ve mentioned thus far  that ALS is caused by, and results from, tau protein entanglement. Yet ALS  researches say they don&#8217;t know the cause of this disease. Can you elaborate on  this disparity?</p>
<p>The disparity exists because scientists are not  exactly sure what causes the tau protein to become &#8220;tangled.&#8221; Is it a nutrient  deficiency? Is it a pesticide? Is it a drug? Is it free radicals? Is it  genetics? Is it all of the above? The inside of the cell is as complex as a  major city. Any single disturbance &#8211; not just tau protein entanglement &#8211; could  lead to neuronal dysfunction. Therefore, there is much debate as to what exactly  causes ALS. Regardless, it is well established that tau protein entanglement  leads to dysfunctional neurons among those that suffer from ALS.</p>
<p>How  does this disruption lead to ALS?</p>
<p>Tau protein entanglement prevents the  nerve cell from forming properly and transmitting electrical messages among the  brain, spinal cord and skeletal muscle. Without the electrical transmission,  muscle control is lost.</p>
<p>Why aren&#8217;t sensory neurons affected?</p>
<p>I&#8217;m not sure why motor neurons are more affected than sensory  neurons in ALS. There are many intrinsic differences among both that might help  explain this selectively. Most likely, it is because motor neurons rely more on tau proteins than do sensory neurons. If a cell does not rely on tau proteins, they are unaffected by tau protein entanglement and ALS.</p>
<p>Other  hypotheses exist. Perhaps both motor and sensory neurons are affected equally,  but sensory neurons regenerate faster and healthier. Perhaps it is because motor  neurons rely on &#8220;astrocytes,&#8221; which also become dysfunctional with tau protein  entanglement, and sensory neurons do not.</p>
<p>If statins trigger  ALS, then in theory, wouldn&#8217;t the progression of ALS stop dead in its tracks  once the person stops taking the statin?</p>
<p>In theory, ALS  symptoms would not stop dead, but its progression might. That is what makes the  side-effect so scary.</p>
<p>It&#8217;s not fully understood how statins cause tau  entanglement. Is it adirect effect of the drug? Or is it due to drug-induced  low cholesterol? Or is it due to DNA damage caused by statins?</p>
<p>Understanding exactly how statins induce damage would help us better understand the etiology and progression of statin induced ALS &#8211; and the long-term outcome among patients.</p>
<p>A certain percentage of the  general American public is diagnosed annually with ALS. Is this percentage  higher among statin users? And if so&#8230;are there other possible explanations,  perhaps some other variable that is associated with people who take  statins?</p>
<p>I don&#8217;t know of any statistical studies looking at ALS  among statin users specifically. But data does exist among &#8220;ALS adverse event  reports.&#8221;</p>
<p>The FDA and the World Health Organization (WHO) monitor  adverse event reports. ALS adverse event reports are simply those people who  report suffering from ALS as a result of using a drug or being exposed to a toxin.</p>
<p>Recently, among those who reported &#8220;drug induced ALS,&#8221; the WHO  reported that 23% in their database were statin users. The FDA reported that 33%  in their database were statin users. These are very strong statistical associations and should serve as an alarm to the medical community. It warrants further investigation into the causal association of statins and ALS. The national average of those who suffer from ALS is a mere .0005%. Whereas, almost a third of those reporting drug-induced ALS are taking statins!</p>
<p>Statins have already been linked to death (Baycor recall). Is it  only a matter of time before more statins are recalled because of a link to ALS,  or is this something that will never receive the attention you think it shouldget?</p>
<p>I don&#8217;t think that statin-induced ALS will ever get the  attention that patients deserve. Only about 30 percent of clinical trials  involving statins are reporting negative outcome. Worse, it could take many  years for a statin user to suffer from ALS. Most statin trials last a mere 5  years. Therefore, the side effect of ALS goes unreported &#8211; it is never even on the radar screen.</p>
<p>What is your response to the fact that ALS has  been around long before statins?</p>
<p>Nobody is saying that statins  are the only cause of ALS. Tangled tau proteins can result from a myriad of  biochemical disturbances &#8211; like excess free radicals or DNA damage &#8211; not just statins.</p>
<p>If statins are linked to ALS, why don&#8217;t more people,  who are on statins, get ALS? After all, millions of people are on statins. Maybe they do.</p>
<p>Adverse drug event like ALS are only reported 10  percent of the time by the medical community. Under reporting is currently the  limiting factor in preventing drug induced illnesses like ALS.</p>

1 teaspoon baking powder<br />

1/2 teaspoon salt<br />
1 1/2 cups granulated sugar<br />
1/2 cup butter (1 stick), softened<br />
1 cup LIBBY&#8217;S® 100% Pure Pumpkin<br />
1 large egg<br />
1 teaspoon vanilla extract<br />

Directions<br />
PREHEAT oven to 350° F. Grease baking sheets.</p>
<p>COMBINE flour, baking soda, baking powder, cinnamon, nutmeg and salt in medium bowl. Beat sugar and butter in large mixer bowl until well blended. Beat in pumpkin, egg and vanilla extract until smooth. Gradually beat in flour mixture. Drop by rounded tablespoon onto prepared baking sheets.</p>
<p>BAKE for 15 to 18 minutes or until edges are firm. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Drizzle Glaze over cookies.</p>
<p>FOR GLAZE:<br />
COMBINE 2 cups sifted powdered sugar, 3 tablespoons milk, 1 tablespoon melted butter and 1 teaspoon vanilla extract in small bowl until smooth.</p>

<p>COMBINE flour, pumpkin pie spice, baking powder and baking soda in small bowl. Beat granulated sugar, butter and brown sugar in large mixer bowl until crumbly. Add eggs, egg whites, pumpkin and carrot; beat until well blended. Add flour<br />
mixture; mix well. Spread into prepared pan. Drop teaspoonfuls of Cream Cheese Topping over batter; swirl mixture with spoon.</p>

1 heaping tbs. fresh parsley, chopped<br />
1 heaping tbs. fresh chives, minced<br />
1 heaping tbs. fresh lemon zest, finely chopped<br />
1 heaping tbs. fresh garlic, finely chopped<br />
1 tsp. sea salt<br />
1/2 tsp. xanthan gum </p>
<p>Combine all ingredients (except xanthan gum) and blend thoroughly.  Slowly add xanthan gum and continue to blend until mixture thickens. Full flavor will develop after 6 to 8 hours. </p>
<p>Note: Dairy products combine best with nonstarchy vegetables and acid fruits.  Don&#8217;t hesitate to add a little Flax Seed Oil to this recipe.</p>
