Hey. I’m 12 weeks preggo and am “trying” to eat healthy. Problem is that I absolutely hate veggies. I can handle broccoli if it is smothered in cheese but that is about it. I was wondering if anybody had any recipes for cooking vegetables that made them really tasteful and full of flavor. Any way to cook them where they don’t really taste like veggies would help. Thanks a bunch.

I like to salt and pepper them. Sprinkle with toasted onion powder. Drizzle with olive oil. Put on a cookie sheet and roast them in the oven for 20 minutes or until they are browned. Really does a number on Brussels Sprouts.
I really like my vegetables either grilled or stir-fried. On the grill I’ll put a little butter and some salt and pepper and that seems to work. Stir-fried I use a bit of low-sodium soy sauce or some teriyaki. Green Giant also has some microwave vegetable products that aren’t too bad for you. A lot of them come with a sauce on them.
Try them raw and cooked and see if you like them any better. I used to like raw veggies better than cooked when I was younger. Try one of those bags that steam your veggies in the microwave too. I just put butter and different spices on my veggies.

She grinds up veggies in her food processor and adds them to regular food.: for example ground up carrots in chili. You can’t even taste the vegetables. Her technique was pioneered to add vegetables to her children’s diets but I’m sure it will work for you too.
In my experience, people are usually not taught how to cook them properly. My mother cooked everything until it was mush. Blech! Besides, many of us grew up having to eat only lima beans, canned corn, and canned green beans. The fresh stuff is so much better (and naturally sweeter).
Try the Ziploc steamer bags. It’s easier than using a saucepan and steamer for steaming. Follow the directions. Broccoli is great steamed with a bit of Kosher salt and maybe a bit of unsalted butter. You can even add this to the bag after the broccoli is done and simply toss it all around. It’s different from the cheesey taste, but it may steer you in the right direction.
Sweet potatoes are good when made into “fries”. Just peel, slice into strips, toss with olive oil and kosher salt (and whatever spices you like) and roast at about 400 until they’re done like you prefer. Fresh green beans are also amazing when they’re roasted. Just wash, snip off ends and roast. Olive oil and kosher salt are good to add, but once again, experiment with seasonings you like. Look on “cooks illustrated.com” for the best recipe for this. Corn-on-the-cob is AMAZING when it’s grilled.
Make olive oil and kosher salt your new best friends. And real, UNsalted butter. It’s amazing how you can improve flavors with simple ingredients. Experiment and look at websites like epicurious.com, cooksillustrated.com for good ideas. Congratulations on the baby!
Eat them in salads. Steam to your preferred firmness, cool, throw on top of your favorite green (iceberg, if you hate greens too), top with your favorite dressing.

I love veggies, and will eat them just about any way, but my family doesn’t like them at all. So, I trick them! I’ve been sneaking veggies into meals for years.
I puree them in the blender and put them in everything. You can mix the pureed veggies with water and use it in any recipe that needs liquid. Just substitute the veggie-water for whatever liquid you’d normally use.
For even MORE veggie-goodness, try mixing the pureed stuff with some low-sodium V-8 juice. It’s really good in meatloaf, meatballs, etc. Also wonderful in soups. You don’t notice the vegetable-taste, just extra flavor. Some vegetables have a stronger flavor than others, of course, but carrots and onions are pretty mild.
If you’re really having trouble getting those veggies down, try eating extra fruit. It’s also very good for you, but cut back on sugar in your diet if you do this. Good Luck!
