“I am wondering if anyone has ideas about how to work around a dairy intolerance while at the same time feeding an infant and adult a nutrient dense diet.”

This is not as uncommon as you might think! A few people here follow a dairy free diet while still eating nutrient dense food, and there are other groups specifically focused on this issue. The one I can think of off the top of my head is the Gluten Free Casein Free Native Nutrition group but there may be others. You might want to do some reading into the Paleo diet as that is focused on good fats, nutrient dense foods and is inherently dairy free.
You should also check out one of my favorite blogs… Everything Free Eating (www.everythingfreeeating.blogspot.com) The writer has steered (is still steering? :) her family through healing from multiple food sensitivies, including dairy. I don’t think she’d say her kids are “cured”, but she would say they are healthier and happier – and she’s got an amazing array of dairy free, grain free, egg free recipes and stories :)
