My dad is diabetic and I have vamped a career to care for him at 85 this means understanding Type 2 Diabetics nature and wanting to cook food that are healthy and from scratch. I think this makes for a healthier outlook than processed foods can give in nutrient, proteins, and greater balance.

I’ll probably be in the minority here, but he’s 85 years old! Let him eat whatever the heck he likes in moderate amounts. Learn the carb content of his favorite foods, and give him the appropriate amounts so that he can enjoy his meals without his blood glucose going too high. And make sure he gets plenty of treats, just watch the portions.
Whole grains for carbs, brown rice. Lots of protein-rich foods – meats are okay, fats are okay, although monounsaturated are healthier. Both will keep his blood sugar from being raised too quickly.
The important thing is to know how many carbohydrates he is getting in a particular meal. I don’t know if he’s on medication or just diet. The best thing to do is consult with his nutritionist.
