Making a healthy meal for dad who has 16% kidney failure?

I’m going to my dad’s Tuesday to make dinner for us. I want it to be kind of fancy, and don’t mind how difficult the recipe is or how long it takes to make, I love to cook. He doesn’t always eat the healthiest and I want to try to give him a healthy dish that will be good for his body. His kidneys are failing and are at 16%, so I want to be sure that it isn’t salty or anything and will help not hurt his body. He is also diabetic.

Recipes or ideas are welcome, thanks!

    Recipes at foodnetwork.com never fail me! You could make stuffed peppers with 96% lean hamburger. I found a recipe at foodnetwork.com and it worked great! :)

    Dispirited princess, I had to take care of someone in a similar position. What you will want to take a look at is called a renal diet. This is a special low protein, low salt, low potassium diet. Please note that cooking for people in your dad’s condition is brutal because even water is limited. Google “renal diet” and see what you come up with.

    I’m thinking you will have the best luck with vegetable sources of protein such as beans, but take a look and see.
