I cook dinner for my family every night and I need a recipe that has common household food or ingredients and is easy to make! Nothing fried we are trying to eat healthy. Thanks in advanced!

    Mexican Roll Ups
    This is something I made up its a great way to use left over meat.

    Use one of your choice
    Shredded Chicken, shredded beef or shredded pork
    Put in skillet with 1 pkg of taco seasoning
    Add enough water so that you may simmer it, not to much

    After simmering like 20 min
    Place small amount in to soft burrito shell, I like to use the large ones.
    Roll them up and secure with toothpicks
    In deep fryer or skillet, brown til golden brown
    They will be crunchy
    Serve with sour cream, salsa or gucamole

    Dont forget to remove toothpicks !!!!

    Pizza Chicken Packets
    4 boneless chicken breast halves
    1 cup pizza sauce
    1 cup shredded mozzarella cheese
    20 slices pepperoni
    1/2 cup chopped green bell pepper
    1/2 cup chopped onion

    Preheat oven to 450 degrees F or grill to medium-high. Spray one side of a 12 x 18-inch sheet of heavy duty aluminum foil with nonstick cooking spray.

    Center one chicken breast on the sprayed side of foil. Spoon 1/4 of the pizza sauce over chicken. Top with 1/4 each of the pepperoni, vegetables and cheese.

    Fold foil into packet. Repeat with remaining chicken breasts. Bake for 18 to 23 minutes on a cookie sheet in the oven or grill for 10 to 12 minutes, covered.

    NOTE: Substitute or add your favorite pizza toppings.

    Italian Chicken Packets
    1 chicken, quartered, or 2 pieces chicken per packet
    2 tablespoons olive oil
    1 onion, chopped
    1 garlic clove, minced
    4 fresh ripe tomatoes or 1 can drained tomatoes, chopped
    4 large green olives, chopped
    1/2 teaspoon oregano
    1/2 teaspoon celery salt
    1/2 teaspoon basil
    1/4 teaspoon black pepper
    4 bay leaves

    Wash chicken quarters or pieces; drain and pat dry. Peel and chop tomatoes if using fresh tomatoes.

    Cut 4 (12-inch) pieces of aluminum foil, and grease one side of each with olive oil. Place a chicken quarter or chicken pieces in center of each piece of foil.

    Combine onion, garlic, tomatoes, olives, basil, oregano, celery salt, and pepper and mix well. Spoon sauce over each chicken packet. Top with a bay leaf. Fold foil into neat, sealed packages. Place on a cookie sheet. Bake at 425 degrees F for 40 minutes to one hour, until chicken is cooked.

    Serve from package.

    Yield: 4 servings.

    Honey Mustard Chicken in a Packet
    4 skinless, boneless chicken breasts
    4 potatoes, quartered lengthwise
    1 bell pepper, cut into 8 strips
    8 to 12 tablespoons honey mustard barbecue sauce
    4 pieces (12-inch long) aluminum foil

    Place each breast on a piece of foil. Salt and pepper to taste. Place 4 potato quarters and 2 strips bell pepper on each breast. Cover with 2 to 3 tablespoons barbecue sauce. Wrap in foil, and place in baking dish. Bake at 350 degrees F for 45 minutes or until done.

    California Chicken Delight

    3/4 cup flour
    1 T. Old Bay Seasoning
    1 t. salt
    1/4 t. pepper
    4 fresh or individually fresh frozen boneless skinless chicken breasts
    2 T. oil
    1/4 pound thinly sliced Prosciutto or deli style ham
    1/4 pound sliced Monterey Jack or Swiss cheese

    IN a shallow dish, combine flour, seasoning, salt and pepper. Coat chicken
    breasts in flour mixture. In a large skillet over medium high heat, cook chicken
    in oil for 20 minutes or until juices run clear. Turn once during cooking.
    (Internal temperature should read 170.) Place one slice ham and one slice cheese
    on each breast. Cover and cook until cheese melts, about 2 minutes. Makes 4
    servings. Note: Cooking time given is for fresh chicken. If using frozen
    chicken, remove protective ice glaze by holding under cool running water 1-2 minutes
    and allow additional time for cooking.

    Lemon Chicken

    6 boneless skinless chicken breasts
    1/3 t. lemon juice
    1/4 cup margarine, melted
    1 t. garlic powder
    1 t. poultry seasoning

    Place chicken in a greased 13 x 9″ pan. Set aside. Combine remaining
    ingredients; pour over chicken. Bake at 350 for one hour. Serves 4-6 If desired, serve
    over rice.

    Make It Easy Chicken

    1 envelope golden onion soup mix
    1 cup water
    3 medium carrots, cut in chunks
    2 medium potatoes, cut in wedges
    1 medium green bell pepper, cubed
    6 chicken pieces
    Seasoned salt, pepper

    Heat oven to 350. Combine soup mix and water; set aside. Add
    chicken pieces and vegetables to 9X13 pan. Cover with soup mix/water
    mixture. Cover tightly with foila dn bake 55-60 minutes or until
    chicken and vegetables are tender.

    ranch chicken sandwiches

    grill seasoned chicken breasts (or cook in pan- whichever!)
    top with two slices of bacon and a slice of provolone cheese
    serve on good deli bun along with a drizzle of ranch dressing!

    serve with nice green salad

    Pieces – bread it & fry or bake
    Lunch meat – Chicken Salad or Sandwiches

    Italian Chicken
    In large bowl place 1 piece of chicken per person and 1 potato per person cubed. Pour your favorite Italian salad dressing over it and mix well.
    Transfer to 9×13 pan cover with foil and bake at 375 for 30 minutes . Remove foil and bake 15 min longer. Serve with green salad and you have dinner.
