almost no oil, healthy…
yes Hk p.. 90% of the time I use Extra virgin Olive oil only… my healthy fat cute mother uses canola oil.. but I don’t ;)
hanabee,,,yeah lolz.. caring about myself now… I love eating vegetables so m looking for some different recipes… :)

    k this is my mum’s one :P :

    get some aubergines, courgettes, carrots, onions, red and green peppers, tomatoes.

    put them in a pan, or whatever, add some salt n pepper to ur liking and a bit of tomatoe puree, and drizzle it with OLIVE oil :P and then put in the oven till cooked. its like grilled veggies :) try it. its tasty :)

    btw i say olive oil, cos without it the veggies are dry, and olive is healthy :) turks use it alot!

    ASAK sis,
    U seem 2 be on a strick diet, Wat’s up?
    Just make a veg stew with all veggie cut in2 cubes & bring it 2 a boil with water,salt & b.pepper & 2 gloves of garlic either crushed or whole.Lower the heat & let it cook until veggie r done.
    After veggie is well cooked & water has come down to make a thick stew like structure add a cup of fresh cut parsley.

    It is very filling & healthy. Enjoy.
    * u can add 3-4 slit greenchilliese to give it a Pakistani taste & also increase the amount of B.pepper.
    Parsley is a very good source of taking out excess body water which makes a diff in weight loss.

    I open the can.
    i pour contents in to a sm. sauce pan.
    turn on the fire and wait till it boils (he he he)

    no i usually have fresh veg. chopped carrots. green beans, peas,potatoes, zucchini or (what ever you like)
    i cook a pot roast
    i use a cup of home made chicken stock, i pour in a 16 oz bottle of cola soda, my veggies and let it boil for about 1 1/2 hrs.

    Ingredients: 500 gm mixed vegetables-chopped and ready to be cooked
    1/4 cup ghee
    2 tsp ginger- finely chopped and ground with garlic
    1 tsp garlic-finely chopped
    1/2 cup onions-grated
    4 cloves
    4 pepper corns
    1/4 tsp cinnamon-broken small
    4 green cardamoms
    1 1/2 tsp salt or to taste
    1/2 tsp chilli powder or to taste
    100 gm blanched almonds
    1 cup coconut milk
    coriander leaves and almonds-slivered and roasted for garnish

    Method: Blend the blanched almonds and coconut milk in a blender and keep aside.

    Heat the ghee and add the onion paste. Stir-fry till brown.

    Add the cloves, peppercorns, cinnamon and cardamoms and mix well.

    Add the vegetables, salt and chilli powder and stir fry over high heat till well coated with the masala..

    Lower the heat and cook till bite like, stirring a few times.

    Add the coconut milk mixture and simmer for 2-3 minutes, and serve garnished with the coriander leaves and the almonds.
