I made some bacon grease mayo today and I thought it was spectacular. Ended up running to the store for potatoes because the mayo was just screaming to go in potato salad.

Here are the proportions:
1 c bacon grease
2 T freshly squeezed lemon juice
1 t prepared mustard
1/2 tsp sea salt
1 raw egg

Whizzed it all up using an immersion blender in a 2 cup measure.
