1 1/2 pounds Grass Fed beef flank steak
1 medium onion, sliced
1 green bell pepper, cut thin slices
1 red bell pepper, cut thin slices
1 jalapeño pepper, diced
2 tablespoons cilantro
2-7 garlic cloves, minced
1 tsp. chili powder
1 tsp. ground cumin
1 tsp ground coriander
1/2 teaspoon salt
1 can chopped tomatoes – (8 oz)
Lettuce

=== TOPPINGS ===
Creme Fraiche
Guacamole
Shredded raw cheddar cheese
Live Salsa

Cut flank steak into 6 portions. Place onion, bell peppers on bottom of crock. Place steak on top of that. Sprinkle w/ jalapeño pepper, cilantro and spices. Top with tomatoes (I also put about 1/2 cup salsa on top of that, but that’t optional).

Cover and cook on LOW for 8 to 10 hours or on HIGH 4 to 5 hours. Remove meat from slow cooker and shred. Return meat to slow cooker and stir.

Maker’s Diet Phase 1 and 2: Serve meat over a bed of lettuce, add toppings and enjoy! Maker’s Diet Phase 3: Serve meat mixture in sprouted tortillas, add toppings and roll. This recipe yields 12 servings.
