Combine berries and water. Simmer low 40 min’s and mash. Strain pulp and seeds. Return juice to heat and add ginger, cloves and simmer for 15 min’s. Strain again. Measure amount of Elder Infusion and add equal parts honey and half1 Qt Elder Berries part brandy. Stir until honey melts and is incorporated. Cool.
Elder to honey 1:1
If you don’t want any of the ingredients you can leave them out. I put the brandy in while infusion is still hot to allow the alcohol to evaporate.Bottle and store in frig.
1 C Water
1 tsp size of fresh ginger or cinn stick
1 tsp whole cloves
Honey
Brandy
