Old-fashioned Oatmeal Cake Recipe

A reader sended me this recipe this morning:
My husband actually loved it (said it tasted like his mom’s old-fashioned oatmeal cake! WOO HOO!!!).

Oatmeal Cake

Night before:Soak 1 cup oats in whey/water per NT instructions.

1 cup soaked oats, rinsed
1.5 cups sprouted wheat flour
1/3 cup virgin coconut oil (or whichever oil you prefer)
1/2 cup sugar (or equivalent sugar-substitute of your choosing, I generally use
honey)
2 eggs wisked
1/2 tsp sea salt
1 tsp vanilla
3/4 tsp baking soda
3/4 cup water *please read instructions before adding*
2 tsp apple pie spice (or more depending on how spicy you like it)
OR
1 tsp ground cinnamon
1/3 tsp nutmeg
1/4 tsp ground cloves
1/8 tsp ginger

Preheat oven to 350 and butter a 13×9 pan.

Mix flour, salt, soda, spices and dry sweetener to blend it together. Add remaining ingredients, incorporating water until a cake batter-like texture/liquidity is achieved and stir until well blended. The water isn’t an exact science, it really depends on the liquid in the oatmeal.

Pour into buttered cake pan, bake for 15 min then test. Remember, sprouted flour browns fast, so if it seems to be too brown, turn down the heat.
