My husband often complains of feeling bloated, heavy, gassy and has bowel…how do I say it delicately…skoots as he calls it. I wanted to give his body a chance to lighten up.
My husband is a big meat eater, and I would like to introduce a non-meat meal once a week. Anyone have experience/suggestions on this?
Here’s one of my fave beans and rice recipes! I absolutely *love* beans and rice and would eat it much more often but the rest of the fam is not having a love affair with beans.
Pink Beans and Rice
1 1/2 tsp. sea salt, divided
1 cup long-grain rice (soaked if possible)
1 T butter (probably more
), divided
1 cup chopped onions
2 T chopped garlic (I use around three cloves)
1/4 tsp. coriander
1/2 bay leaf
2 cups homemade red or kidney beans (or one can, drained and rinsed)
1/2 cup chicken broth (or more if you plan to cook the rice in broth)
Prepare rice (with around a tsp. of salt and some butter–delicious prepared in chicken broth!). Meanwhile, heat some butter in a large skillet and add onions, garlic, coriander, and bay leaf. Cook until onions almost golden. Stir in beans, 1/2 cup broth, and remaining 1/2 tsp. salt. Simmer until beans are heated through
and well-seasoned. Transfer rice to skillet and combine.
