With it getting close to the season for colder healthy foods, here is another recipe for salsa. I had this at my Brother’s house a couple of months ago and have been trying to duplicate it since there were so many people at the party, nobody had any idea who made it.
Black Bean, Corn & Avocado Salsa
1 Can Organic Black Beans, drained
1 Can Organic, non-GMO corn kernels, drained
2 Avocados, 1 1/2 cut in chunks and the rest smashed
1-2 Tomatoes diced
1 med red onion diced
1 head of garlic, minced
1 bunch cilantro chopped fairly fine
1/2 bunch parsley chopped fairly fine
1/4 bunch of dill chopped fairly fine
1/4 C Olive oil
1/4 – 1/2 C lemon, lime (or a blend of both-my preference) juice (to taste)
Salt and Pepper to taste
Prepare all ingredients as above and mix together. Allow to chill overnight so the flavors have time to merge. Serve with organic tortilla chips and Enjoy ;’)
The best part of any salsa is that you can add whatever you want to it or not. You can add some jalapeno peppers, or roast them for chipotle and then dice and add to the above, or habanero, or regular bell peppers. You can even add mango to this and it would still be awesome!
