Help with a simple but tasty recipe for a healthy chicken, shrimp or fish dinner; BUT for a cooking novice!!!?

I was hoping to brew something up for my girlfriend tonight, who normally does all the cooking. The only problem? I utterly and completely suck at cooking! Nevertheless, if there are clear and concise instructions within a recipe, I am confident that I can hack out a decent dinner for my gal. Soooooooooo, are there any cooks out there for us novices, who can come forward with a simple recipe that involves chicken, shrimp or fish for a nice, tasty and healthy dinner? If so, I’d be forever grateful. The sooner the better with this answer, because if someone steps forward soon enough, I’ll be able to do this for tonight!

Delicious Brazilian Fish Stew Recipe


Muqueca is a fish stew with tomatoes, red peppers, onions, coconut milk and palm oil. It’s quite simple to prepare and goes very well with plain white rice. Although Muqueca comes from the North Eastern state of Bahia, it’s eaten throughout Brazil.

Tasty recipes for fish and chicken that are also healthy?

I’m looking to change up my fish and chicken dishes, which basically just consist of some lemon pepper and salt, old bay seasoning and occasionally dill.

It does taste good, but after awhile it gets very boring.

I’d also like to experiment with other types of fish, rigth now all I cook with is talipia.

Any new suggestions would be greatly appreciated.

*FYI: Nothing fried or with any type of breading. Sauces are OK.
