Making a healthy meal for dad who has 16% kidney failure?

I’m going to my dad’s Tuesday to make dinner for us. I want it to be kind of fancy, and don’t mind how difficult the recipe is or how long it takes to make, I love to cook. He doesn’t always eat the healthiest and I want to try to give him a healthy dish that will be good for his body. His kidneys are failing and are at 16%, so I want to be sure that it isn’t salty or anything and will help not hurt his body. He is also diabetic.
