High Blood Pressure! Need Healthy Recipes (No Salt! Please) …..?

Here’s the deal. I’m a Fedex Express courier. I’m on road about 10 hours a day and I tend to eat whatever I find on road that’s cheap. (.99 chicken sandwiches)

I need to get away from that.

I’m told that processed foods have salt and other nasty goodies that are not good for me … deli meats/sandwiches and prepackaged stuff you can buy at 7-11.

I love sandwiches but I don’t eat cheese because I was told the cholesterol will clog my arteries. Ok … no more cheese …

I drink so much water I’m still bloated when I get home … but I also drink diet coke.

I take my medication but it doesn’t really help. My opinion of course.

Any ideas for taking a lunch on road with me? Something that hopefully doesn’t take a long time to cook/prepare?

Any good recipes that use salt roasting?

I’ve been reading a few articles about the miracles of salt roasting; covering fingerling potatoes or a roast in a bed of sea salt and baking in the oven until done. Has anyone tried this, and if so, what were your experiences? Anyone have any good recipes?

I need help finding cookbooks, recipes, and tips for salt free/sodium free cooking. My grandmother has recently had some major health problems and we are redoing our cooking styles to help her be healthier.
