Diabetics Type 2 natural foods to make, anyone has any great recipes to share?

My dad is diabetic and I have vamped a career to care for him at 85 this means understanding Type 2 Diabetics nature and wanting to cook food that are healthy and from scratch. I think this makes for a healthier outlook than processed foods can give in nutrient, proteins, and greater balance.

Anyone have good and healthy recipes they could share?

Here’s the deal–I do my very best to eat healthy at home. I buy and prepare balanced meals but I only know a few and am not a huge cook. I live alone so I don’t like to make HUGE meals for just myself because I can’t eat it fast enough. Does anyone know any recipes that are balanced–or where I can just add my own fruit and veggie–that are healthy. And that aren’t complex and that taste good. I try to buy as low sodium, fat, and calories as I can. I’m a very basic food kind of person. Even if you have a recipe that I can tweak to fit me, that’s fine. I just need some variety! I can only make so much of what I do before I get bored. Thanks so much guys, I really appreciate it =)

Have any good campfire recipes to share?

I’m getting around to planning the menu for our July camping trip. Do you have any favorite, easy supper recipes that don’t require a lot of refridgerated (cooler-ed?) ingredients?
We will be cooking over the campfire or a small propane campstove.

Can you please share some easy Romanian recipes for me to try?

I saw a topic about Romanian food and people were listing their favorites. I was wondering if you could please give me some Romanian recipes to try, using American measurements, and if the ingredients are not readily found in American supermarkets, please tell me where to find them.

I am mostly interested in simple, delicious recipes.
